After combining a few different recipes for white chicken chili, I wanted to share a version that is macronutrient friendly yet tasty. My goal here was to put together something both healthy and easy.
INGREDIENTS
- 2 TBSP Olive Oil
- 2 Sweet Onions – chopped
- 1 can diced tomatoes
- 1 can whole kernel corn
- 1 can sliced jalapanos
- 2 – 8 oz cans of green chiles – without draining
- 4 TBSP minced garlic
- 32oz Chicken broth
- 1 shredded rotisserie chicken
- 1 TBSP cumin
- 1 TBSP oregano
- 1 can small white beans
- 1 can cannellini beans
- 1 can pinto beans
- 1 TBSP crushed red pepper
Note: I like to use “arrowroot” for a little thickener. I like my chili on the thick side so I will add a tiny bit of arrowroot at the beginning. Don’t overdo it as a little goes a long way.
Throw everything into a crock pot and cook for 5-6 hours.
Did I mention this was easy?!?!
